Glazed Jelly Doughnut Cupcakes

Saturday mornings…  When I was a kid, we couldn’t wait for Saturday morning because the five of us kids would go in and wake up Dad.  He would make his cup of coffee and off to the doughnut shop he went.  What a treat!  We couldn’t wait until he returned with all those lovely sweet goodies.  So Dad…

Glazed Jelly Doughnut Cupcakes from

This recipe is typically made with a vanilla cupcake but Java Cupcake wanted to change things up a bit.  This cake is made with “a hint of maple syrup and cinnamon.”  And let’s not forget the brown sugar.

This is a very easy recipe to make.  I was surprised because I thought making a “doughnut” cupcake would be hard.

The cupcake is pure delight!  It’s light and moist, and the most flavorful cake.  I surprised my myself by how much I liked this cupcake.!!!

Of course, it wouldn’t be a glazed jelly doughnut without the glaze and the jelly.

The glaze is just three ingredients you whisk together.  When the cupcake is cooled, you dip the cupcake upside down in the glaze and shake off the extra.  Then you fill the cupcake with jelly.  I had Oregon Blackberry Jam in the frig, so that’s what went in the piping bag.  The recipe says to “make sure to squeeze enough so that some filling comes out the top.”

This is another for the recipe stash.  It’s so easy to make and takes so little time, this could be the new Saturday morning tradition.
