Margarita Cupcakes

Today is another attempt at margarita cupcakes.  I chose this recipe because I found it on so many blogs.  The recipe creator is not sourced but the oldest post I found was at Recipe Girl.  So…

I thought long and hard about this recipe for two reasons.  The first, it’s a box mix, not from scratch.  And, second, the first step of the recipe is to make a margarita.  This was the tipping point.  How can you go wrong by starting with a cocktail?

After making your margarita, you are instructed to measure out one and a quarter cups for the batter then “pour the rest on some ice and drink it while making the cupcakes.”  We’re having some fun now!

Make sure you don’t lean in too close while mixing your batter.  The alcohol fumes will knock you over!

This is a very easy recipe to make.  The texture of the cupcake is okay.  Unfortunately, I wasn’t all that fond of the cupcake.  It tasted like a VERY sweet angel food cake.  Not what I was looking for.
