I’m continuing with another mint flavor since I have so much fresh mint leaves left over from the Mojito cupcakes.

Again this cupcake starts with the Simple Vanilla Cupcakes recipe. In this version you replace 1 teaspoon of vanilla with 1 teaspoon of bourbon.
The cupcake is a delicious vanilla cupcake with just barely a hint of bourbon flavor. Once you add the Bourbon Buttercream frosting and garnish with chopped fresh mint leaves this cupcake goes horribly awry. By the way, this is the only mint flavor in the entire cupcake.
The frosting is bourbon, bourbon, bourbon. If you like you bourbon “neat” this may work for you, otherwise, I suggest passing on the frosting. Then garnishing with fresh mint leaves is just weird. I’m not a fan of chewing on mint leaves.
My photo isn’t the greatest. It was so hot in my house, even with the A/C on, that by the time I took the photo this thin frosting began melting. Even after refrigerating the cupcakes, it was too late for the frosting. It just firmed up in its melted state. Bummer! You’ll also notice I’ve picked off the mint leaves and sprinkled the cupcake with some green sugar. This did nothing to help the taste.
This recipe needs a major rework!
