I decided to make another coffee flavored cupcake today in case you needed to make cupcakes but are also experiencing a bit of a tequilla hangover from Cinco de Mayo.

This recipe also makes a pretty chocolate batter. You’ll need espresso powder and cocoa powder for these cupcakes. Check the cupboard before you decide to bake.
I thought by using espresso powder in this recipe that the cupcakes would have a heavier coffee influence. I was wrong. Yep! I said it. I was wrong. The espresso is subtle with a very nice balance from the cocoa powder.
The cupcakes just came out of the oven and all I can say is… I AM A CONVERT to coffee cupcakes, and this Mocha Cupcake in particular.
The cupcake is light, fluffy and moist. It has the most delicate and delicious chocolate espresso flavor, with no lingering coffee taste in your mouth. Did you see how pretty this cupcake is?
The recipe creator adds Kahlua frosting to this cupcake. Can you say divine?
This recipe has become my number one coffee cupcake recipe!!! I know what I said yesterday but I’ve changed my mind; maybe because this cupcake blew my mind.
