This should be no surprise: chocolate and Jameson Irish whiskey. Could you ask for anything better?
Chocolate Whiskey Cupcakes from http://annies-eats.com
The recipe is put together a little differently. You mix together a cocoa/espresso paste. After mixing your butter, sugar, vanilla and eggs, you alternate adding the dry ingredients with the “chocolate” paste.
The chocolate aroma coming from the oven is delightful.
After letting the cupcakes cool, you brush on a cooled Irish whiskey syrup. I love this version of the syrup. Other recipes call for other ingredients. This one is a pure whiskey syrup: water, sugar and whiskey.
The proportion of cupcake to syrup is just right; at least for me. Especially since the recipe calls for an Irish whiskey buttercream. That’s more than enough alcohol for me. Can you say “tipsy”?
This dark chocolate cupcake is light, fluffy, moist and very delicious. So delicious it can be served on its own. Adding the syrup just takes the cupcake over the top. I’m loving this cupcake!!!
